Got a grinder stuffer for Christmas and took a shot at sausage today.
Took a gander at come recipes and setteled on the chicken, basil sausage... here is the q-view...
The book...

I have some that didn't make it into casing so I will use that tonight with some pasta...

I rolled the loose meat into mini-sausages and sauteed them in some EVOO.


I made a simple sauce using this... some garlic and fresh basil...



My dinner...


It was a little salty on the backend, which was interesting. I don't use much salt when cooking, so I may be mote sensitive to that. Next time (and there will be a next time) I will not use as much salt. I think the pork back fat has salt in it too so that probably contributed to the saltyness.
Even so, these were some of the best sausages I have ever had. It's all I can do to not go up and eat the rest of them. It was a little bit of work, but well worth it.

This is one of my favorite recipes from that book. I bought a 40 lb box of chicken thighs and made a butt-load of them 2 summers ago. Everyone I shared them with loved them. Need to make some more this summer.
 
WOW now thats some great looking sausage you have Elly. I also being new to the world of sausage I'm tring to come up with new recipes all the time. Now yours looks great and I also like the pasta idea to. We are starting to eat alot more pasta dishes and such with homemade. Have you tried the snack stick yet?? I just sent about 11 lbs to Iraq this past week. Thanks and happy sausage makin.
