Brisket for lunch

    Picked up a brisket for $2.49# trimmed seasoned with salt,cracked black pepper,garlic and some dehydrated onion will smoke with post oak overnite planning to try butcher paper as the wife wants less bark.

    No pic but wrapped at 6 am it 156 smoker 234,early stall my guess. WSM ran fine all nite with no alarms from the Maverick.:biggrin:

    Up to 167 IT, WSM at 221 just opened vent to half way.

    Welcome aboard Al,buy that new smoker yet? IT 180 WSM 240 opened the one vent fully now.

    I got my plate ready... lol!

    I love those over-night smokes, great way to go for a low and slow smoke.

    Okay pulled at 194 IT,resting now! Tossed in some taters will make some shells and cheese as well. The wife seems pleased with the butcher paper wrap.

    Well it's running late as usual but we tossed some little smokies in BBQ and did some cheese and crackers to hold the natives over. Early bird dinner it will be senior discounts available.:biggrin:

    It was only about 11# after trimming but still took 15.5 hours maybe some day I can learn to turn the heat up a little or start earlier!

    I'm looking forward to breakfast as well,but we may have to wait to have that for dinner tomorrow.

    Well it was a little over done on the front for sure not dry but tasty for a chopped sammie! When I probed it seemed to still have some resistance about where flat and point meet but it needed to be time to eat so I pulled and wrapped rested a little over an hour burnt ends and/or hash up next then some quesadillas.

    Forgot to mention the wife was happy to not have a thick bark.Thumbs Up

    Thanks, it did taste pretty good! We tried the Heinz Pitmaster BBQ sauces the Texas style and Kansas City style both were tasty!

    I don't care for the bark on Brisket PP is okay.Nice job on the smoke
