Thanks for the helpful suggestions, Todd.  The pellet tray and pellets arrived with today's mail.

FIRST SMOKE REPORT:

I thought I got more pictures, but don't know what happened to them.  I think the iPhone got hungry and ate 'em.

The family said it was great . . .  but I think I can do better.  The rub was one I'd never tried before.  I think it was one variable too many.  Also, I was without the AMNPS and relied on keeping the chip tray fed.  I discovered that was a lot of work as it would smoke for a short while then the smoke would disappear and I'd add more chips.  I'm certain that the pellets will do a better job.

But, I don't intend to become a turkey expert (more like become a turkey).  My next smokes are gonna be brisket, boston butt, and ribs.  Then my next run on poultry will be small hens.

I'm gonna have to set up a meat fund - I'd call it a squirrel fund but that ain't the kinda meat I plan to smoke.
