    The wicked baked bean recipe is the best.  Leave the peppers out.  I will be making another batch for work next week.

    I think 2 8-10# briskets would be enough.  But it will just depend on how much fat they have on them.

    I prefer to cook the brisket before I seperate to slice.  The briskets that I have been cooking with lately have been around 10-12 lbs.  I prefer to cook mine with the fat side up.  Bobby

    Going to my first Q'n Comp. in September.

    I did a small competition in June.  I was real nervous, but ended up doing very well.  I say jump in with both feet and do it.  You don't know how you will do until you try it.  It will be a lot of fun no matter how things turn out.

    Hickory wood is fine for the turkey.  Brining on poultry seems to work miracles.

    I would just vacuum pack if you have one.  Wrap in foil with a touch of water or apple juice to reheat.  The food looks great.

    We are addicted to Sams.  We live an hour away, but make several trips each year to buy in bulk.  It is well worth it for us.

    Help with Ribs Please

    One way that I check my ribs is stick a butter knife in between the ribs.  If it slides in without resistance then they are done.
