Anyone making their own charcoal? I have lots of walnut, ash, sassafras, and maple. I read sassafras is not suitable for smoking but would the taste be in the charcoal? Most of it is a by-product of habitat manafement.
Ordered my first Pellet smoker yesterday and anxious to get it. 73 years old guy from Jax Fl and now retired to Baker County. Absolute rookie to this type of cooking so looking forward to reading and learning.
