ok this recipe is my grandmas. And she got it from her grandma. I luved eating these as a kid. I figured I would share this with you people. I just made about 7 quarts of these. can't wait.

In 1 gallon of water dissolve 1 cup of Pickling Lime
Peel and chunk zucchini. poor in crock and cover with lime mixture. Let set for 24 hours.
Rinse several times and drain for an hour or 2.

add below ingredients in to large pot and bring to boil.
6 cups vinegar..................2 Tablespoons pickling spice
10 cups sugar...................and green food coloring if desired. (i don't know how much)

Pour over zucchini and let stand for 24 hours

next day cook all together for 35 minutes at a rolling boil. pack in to jars, cover with liquid and seal cans how ever you want.
