I made this on Wed than let sit overnight. Tried it yesterday and really was not happy with it. I have been fighting a cold or something which might of effected my taste buds. Just ate another piece for lunch and tasted pretty good. Oh well. Also had made a keto blueberry coffee cake and not like that either. Guess I need to try it again. I started day before and made up some Sweet Italian sausage. I decided I would try to cut the Zucchini thicker this time. I lightly salted one side and let sit 20 minutes and wiped off. Repeat other other side. I normally would put on the grill at this point to dry up but decided to use oven which is a lot easier. Ended up sticking back in the oven while it was cooling down.
I like to add spinach and discovered a new way to get water out, ricer. Boy a bag turns into a small amount. I used microwave to cook. Browned up sausage and added diced tomatoes, spinach and basil. Added a jar of sauce and some Italian seasoning.
Made up filling. Ground up some parmesan. I like extra filling and always double. Makes a lot easier to spread also.
Layered squash, filling, sauce than cheese and repeat. I like to use fresh mozzarella but Aldi did not have and did not want to go another store.
Baked 45 minutes.
