I noticed that in alot of q-views on the SMF that raw meat is placed on wood cutting boards. I've always heard that this could be a health issue. the blood soaks in the wood can someone shine the light on this 4 me. thanks oh if any is in the Panma city beach area any good eating places oR sites I'll be vacating there in about 2 weeks.

Actually, I believe that's a kitchen legend and not the case. Alton Brown did a test (I'll see if I can find it for you) and washed both wood and other types of boards. The wood had no more germ activity than any other products.

Having said that, I usually just take a little bleach (1 tbls to 2 qts of water) and rinse the board once it's been cleaned.

I prefer wood to any other surface as, IMHO, it also limits the damage to your knives.
 
Well, just checked and I stand corrected. Raw meat (according Alton) SHOULD be done on plastic, etc so that it can be put in the dishwasher.

A good hard maple choppin block ain't a soakin up much a anythin. Got one a grandpa's I use all the time, clean it up with a good rubbin a salt. Ain't killed nobody in the family yet. Were used for who knows how long till plastic came out. Just clean a wood board good an yall shouldn't have no problems. Only advantage ta plastic is putin it in the dishwaser, an we ain't got one them, lessin ya wanna call momma that, an I don't recommend that! Just my two coppers worth.

I Stick by the old theory of a thin bleach / water mix for killing the nasties , and a good sand or planeing when it starts to look a little fuzzy.
 
I jave two large plastic cutting boards for raw meat and only use wood for the finished product.

Having lived through a case of food posining any extra saftey steps are fine with me.

Me too, years ago in Hawaii at a Luau SP? we were eating from wood planks. Almost felt like dying. On the toilet and throwing up at the same time. Not good. No more wood for me.
 
I can't remember where I read this but... I read somewhere that wood is actually safer than plastic because the wood actually has antibacterial properties that keep the bacteria from multiplying and the knife cuts and grooves in plastic give them a home.
