I have a question for you veterans of the GOSM smokers.
Do I replenish the smoke box after the chips turn to a white ash or before that when they are black and charcoal looking and don't seem to be producing smoke.
It seems that when the smoke stops issuing from every seam of the smoker, that its time to dump out the blackened chips and add new ones.
But I'm wondering if this is the phase when the legendary "thin blue smoke" is produced???

The thin blue will come if you use the right amount of chips.

I don't have a GOSM but I figure that about a cup of chips unsoaked, would give off a gentle smoke. You don't want the neighbors worrying that your house is on fire. In fact, you should just be able to make out a trace of smoke from the seams of your smoker. That my friend is TBS.

If you can, switch to wood chunks instead of chips. They take longer to burn and don't smoke as heavily as chips. 3 chips in your pan should be about right for TBS.
 
Yes...and I saw yer dutch oven mod..verrry interesting...though I think I'll stick to the old box fer a while.

You'll have a hard time fitting the chunks in the original box that came with the GOSM (it is pretty small). I use the coffee can mod myself, but the other suggestions are equally as good. Try one of these mods, you'll be much happier with the chunks.
 
It took me a while to learn myself, with the help of Crewdawg, that the TBS is not heavy white smoke with a light blue tint. The TBS is just that very thin blue smoke, barely noticeable.

OK so the coffee can (mod) just goes in place of the stock smoke box..or do I have to modify the rack also.
I take it you use the 3lb can???
 
Smoke-I've been using my GOSM for a couple of years now-I still use the orginal box and I use chunks-I just don't use the lid anymore when I'm in propane mode. When the SFB is fired up, it's charcoal witn chunks or thin splits depending on what wood I'm using.
