Thanx to the SMF, apparently I've become a pretty decent rib smoker. Seems another website I'm on a few people who had sampled the ribs were bragging on me. Another user of that website happens to be the executive chef of a spendy downtown Okc resturant (in a recently remodeled historic hotel) (I'm leaving some specifics out to protect the guilty lol) This chef has opened resturants in the MGM Grand in Vegas, the Bellagio, and Paris Hotel before he came here. He got tired of hearing about how good the ribs were so he and I agreed to a throwndown (Bobby Flay style). So me ( a no name person who I guess is decent with a smoker) is going up against a 5 star rated chef. I think I'll actually fare pretty well here but even if I lose...it'll taste good. I can't wait.
