Will be getting my WSM this weak.

    Through a contact I have in Weber, I am getting a FREE 18" WSM. I can't wait!
    For my first try I was thinking about some spare ribs and chicken. Not looking for anything fancy. If you have any ideas let me know, I have been lurking here for awhile now so I have a few ideas. Thanks!

    Congrats on the new smoker.... All sound like good first cooks ... You may wanna go to roll call and check in.. Makes it easier for people to answers questions u may have later :)

    It is common to get the brinkman waterpan- as it holds alot more water and is lot less prone to accidently spilling.I use the brinkman water pan on longer smokes - you dont have to refill it.I still use the shallower original pan on chicken etc.I have smoke grilled a 23 pound thanksgiving turkey at 350 before as well.Good luck-i own 3- 18" and a 22".I use them in comps.

    I did my first smoke on Sat. and turn out great. I did 4 racks of baby backs. Sorry, no pics. I was getting crunched for time because I had to pack up the rids and take them to my brother-in-laws for dinner. My father in law told me the day before that you had to boil rids before you cooked them because thats what he has always done. Man did he eat his words and my ribs! I used the method from the Virtual Weber Bullet forum, but had to add some coal halfway through. At first i had a hard time getting temps above 200 but it was all good. I used 3 chunks of hickory for smoke wood. I wil be try some chicken later this week.
