What can I do with these thin beef ribs?

When the stores put prime rib on sale I stock up. The stores trim the ribs thin and tie them back onto the roast. What can I do with these? They look too thin to smoke and eat like this. Do I thaw and cut the meat off for beans or grind for burgers?

I BUY 3 WHOLE STANDING RIB ROASTS EVERY XMAS, BACK OFF THE RIBS AND CUT STEAKS AND A COUPLE SMALL ROASTS. I'VE BEEN DOING THE RIBS IN MY CROCKPOT TILL THEY ARE FOTB, MEAT MAKES A NICE MEAL OVER PASTA OR EGG NOODLES. RAY

I cut them into 1.5" steaks and vac pack. They usually go for $4.99-$5.99/lb every Xmas and Easter. Next time I might see if I can get to the butcher so they leave the ribs on and I can cut thicker rib meat. Some of the ones in my freezer will go into the next grind....cheaper than what I get chuck for right now.

Ribs are nice on the steak for the presentation, but I prefer them trimmed and the bones go for stock as others have posted. The beef stock from those bones is fabulous. If you can add in a shank piece even better.
I also live in the winter territory where they sell pretty inexpensive rib roasts over the holidays. I wish they had the same discount on brisket

I'm also onboard for making a soup out of them.

If you get your hands on some beef stew meat you can throw these guys in there for even more flavor and to add to the beef stew. I see "back ribs" on sale at the store just like this and for a ridiculous price and wonder "why" lol. I'm sure you'll find a good use for them :D
