Don't have the restaurant kitchen ready for the smoker but we just couldn't wait any longer..................this is a "clean out the freezer" party which I NEVER EVER SELL, because there is a definite difference in fresh vs. frozen meat.

However, with that said, I do have friends that swear they can't tell the difference and they'd have a fit if I just threw it away so..............we smoked and gave some local firefighters something to munch during their monthly meating, and utilized the smoke to further train a friend who is starting to get involved with my catering jobs.

YUM YUM anyway, but not my usual grade A......!

Great looking food. You should be proud not only of the smoking efforts but of the kindness shown the firefighters. Having once been one, I am always touched by the kindness others show toward them.
 
Grade A or A- I don't think it matters to most. Looks like some awesome smoked firefighter food - Keep up the good work Shelly!
