Turkey deli meat

I brine my turkey with salt, brown sugar and pickling spice and love the taste.

Would it be possible to take some ground turkey, stuff it in a salami casing, brine it, smoke it and have it turn out?

This way I can run it through the meat slicer and have the same sort of meat that they have in the deli except it will taste better.
 
Ok so here is what I did.

I bought some ground turkey from the store

Mixed in some extra pork fat to hold it together.

Added some cheese because I just got in my order of high temp cheese.

Placed it in a casing and now it is sitting in brine.

I am going to smoke it tomorrow and slice it up

I will let you know how it turns out
 
Well it came out of the smoker and has cooled down.

The texture was acceptable.

The flavor was gross, If I ever decide to do this again I will have to mix some flavor with the meat.
 
Yâ€[emoji]8482[/emoji]now Cheech, Itâ€[emoji]8482[/emoji]s like hot dogs, beef, pork, chicken or turkey, they all basically taste the same, its all in the seasoning, I guess, however I would lose the cheese and save it for snack stix! :roll:
 
Up in smoke,

It is like this, I ordered the cheese and it came in the mail and this is the first thing that I had that I could stuff the cheese into.

The cheese was not the problem with the taste but it really did not go with it either
