Made the trip to Butcher BBQ in Wellston, Ok today. Its about 44 miles from my house, a 50 minute drive, but worth it. We make the trip 2 or 3 times a year.

Butcher BBQ is owned by Levi Bouska, son of Dave Bouska, who was seen on 2 or 3 episodes of BBQ Pitmasters. He's also won a lot of comps in Oklahoma and nationally, like the Jack Daniels. And sells a line of rubs and injections under the Butcher BBQ brand.

And he was there today. Looked busy or I would've asked him for a pic.

His son started this barbecue joint in 2015. Its on Route 66, ya know, where ya get your kicks. That Route 66. Its about halfway between OKC and Tulsa.

We got there about 15 minutes till 11 am and there was a line of maybe 20 people. And the line kept replenishing and growing the whole time there.

And the barbecue .................. its was very good as always.

Mrs Okie and I both got a two meat plate, cuz we wanted to try everything. We got ribs, chicken, burnt ends, and jalapeno cheese sausage. The sides were mac cheese, cheesy tater tot casserole, and the apple baked beans that Butcher does so well.

The sides were every bit as good as the meats and them alone , can get me to make the drive. Mrs Okie loved the tater tot casserole.

The ribs were sweet, much sweeter than I'm accustomed to, but they were very good. Closer to Kansas City style of barbecue, which is typical of most of Oklahoma barbecue. It was taken to fall off the bone doneness, because that's what most of the non barbecue people look for in a rib. And hey, they're there to sell ribs. It doesn't bother me at all, they weren't mush. And I'm looking for flavor over texture. There was plenty of good flavor.

Mrs Okie loved the burnt ends. I will give them a good go with take home we will finish this evening.

The sausage was good, casing had a good snap.

And we've just barely tasted the chicken. Its gonna be the main course this evening. From what I can tell, they use a sweet rub and it was sauced sweet. Will see.

Mrs Okie raved about the cheesy tater tot casserole. She's searching the internets for a recipe now

I took a bite. And it was good.

My first trip to Butcher BBQ was in August 2018. It was just an open pavillion. Its now completely enclosed. With a small concert venue on one side along with outdoor seating.
