I just watched an episode of DDD where they visited a BBQ joint that folks are raving about and he cooks his ribs for 12 hours at 225 over fruit wood. 

How can a rack of ribs handle that much heat for that much time and not be dry - they do spritz with water and apple juice but I have a hard time understanding how a rack can handle 12 hours
 
Did they say how many racks are going in the cooker at one time?  I can see a larger quantity of meats taking way longer than just doing a couple of racks in the backyard.  I think many of those shows over/under state many details either for the show, or the details get crossed by 'production folks' who don't really know the craft.
 
This is one of the big restaurant smokers - It was on the BBQ tour Guy did 

Several folks cook for really long times - 1/2 chickens for 5 hours 

Or ribs done in 3 hours that are fall of the bone -  Just proves you can cook different ways and be successful
