I got beef , but figure this ? covers pork trimmin's as well
Did my first brisket and saved all the fat and trimmings , boiled them down in the juices from the pan and the leftover bulion I added to the pan while smoking. Now I have a good size bowl of the " stuff " ( some meat , fat , connective tissue stuff ) and am cooling the liquid so I can peel the fat off the top of the aus jus . Should I mix the fat from the aus jus and the "stuff " and then freeze and save to chop up into other things like beans and such ?
Or , just keep the aus jus fat and toss the trimmings now that they have been boiled down for a bit ?
