Hello all,

I received a BTLE for Christmas 2014 and been in love with smoking meat ever since.  I purchased a charcoal basket, complete gasket and latch mod, as well as baffle and tuning plates (I've been all over this site before finally creating a username).  I am in the process of converting my pit to reverse flow in attempt to equalize temperature across the cooking surface.  I have an open question to the community of experienced BTLE users, how long of cook times can you achieve (assume using a charcoal basket) without adding wood/charcoal holding temp between 225-250F? I have tried the minion method before with little luck and find the temps would get too high! I know my pit very well at this point and have had very good success producing an excellent product.  That being said I am babysitting for the entirety of the cook and every 45min-1hr I'm going outside to add fuel. Any input or suggestions are welcome! I've got an event coming up in March where I will be cooking brisket and pork butts, so anything to extend my cook times without babysitting would be greatly appreciated. Thanks!
