Coastal Carolina - Cape Fear
I have been smoking for about 5 years now. I started on a Webber kettle, moved on to a char-broil off set while in grad school. About six months ago I bought a Traeger Texas. I smoke at least once a week,
I love to smoke brisket. I avoid crutching, although when I'm lazy I'll use the 3-2-1 method on ribs. http://www.smokingmeatforums.com/content/type/61/id/284060/width/200/height/400
 
Welcome to the forum, johnjen. Love brisket myself. SPOT for seasoning, put it on, take it off at about 2030 IT, wrap for a couple hours. Nothing fancy. Enjoy your stay. Lots of good folks and good info here.
