Rude awakening after being in Florida for a week.  Snow???? Sheesh!

So smoked some Mild cheddar, Mozzarella, Monterey Jack, and Colby Jack yesterday.  Three hours with Hickory/Apple mix.  Wiped it down when finished and wrapped it in Saran Wrap.  3 weeks minimum of mellowing seems to work well, longer is better.

I found out that using the AMNPS can get warm enough that a rack too low will allow the cheese to start to melt somewhat.  Other than that, no problems.
