tonight's menu- smoked meatloaf

decided today to smoke a meatloaf for supper. i took 1lb of ground beef, mixed it with 1lb of JD regular sausage, 2 eggs, cracker crumbs, and worcestershire sauce. formed it into a loaf on a cookie sheet. sprinkled it with more worcestershire sauce, chili powder, ground black pepper, and garlic powder. smoked it at 240°. used 4 lb kingsford charcoal, and 2 mesquite splits (1-8" and 1- 10" diameter, 14" long) with 6 small (2"-3" diameter, 8"-10" long) pecan pieces. i put it in the smoker at 3:45p.m.; and pulled it out at 5:50p.m., when it hit 185° internal. here is some food porn of it, one whole, and one sliced.
it tasted very good, and had a decent smoke ring. i will definitely be making this again. i also heated up what was left of dutch's wicked baked beans from last night, and baked potatoes. i put the potatoes on the smoker (washed, poked with a fork all over the top, rubbed with EVOO, and sprinkled with salt and pepper). i finished the potatoes in the microwave.

YUM! I Love Smoked Meat Loaf!

I did one Sunday and have had smoked meatloaf sandwiches for lunch every day this week.

I have been thinking about making a meatloaf for some time now. I just need to find the time. i am not going to wait till after the holidays for a good cooking session.
