Well I picked up a yardbird yesterday on a whim and decided I would do a pizza fatty for a side/snack. I didn't inject, marinate or rub down the chicken with anything, just out of the bag and onto the smoker. Once the ends started to crisp up, I foiled, poured an OJ and AJ mix into the center of the chicken and put it back in til it hits 170 degrees. (Almost there). After I foiled the chicken I put the fatty on. I bought some pizza dough from Wal-Mart to incorporate with the Pizza Fatty. I think I will wrap the fatty with the pizza dough and bake.

No spritz. Put the bird in naked and then when the tips of the legs begn to get crispy I foil it with some OJ and AJ and cook til 170.
 
don't unlease the hounds till you are done eating. fer sure they would hop on the supper table and eat all that fine looking table fare.
