Well, started the morning off well and got the snack sticks all ready to go. I just did a small batch in the new smokehouse I built, if they turn out good I will do another 25 pounds later!

The stix are hanging to dry out the casings while I get the smoker up and running!

1 1/2 hours in the smoker, the casings are dry and ready for the smoke!

3 hours in the smoker and lookin good, notice the nice color change... YUM!

Well its been 5 hours in the smoker total and my internal meat temp is 132, just waiting for it to hit 152 and then it's bloom time! There will be more pics to come!

What size casings did you use?
 
Thanks, I believe they are 19mm casings. I had to get them from somewhere else other than the butcher shop I always go too. The ones I usually get are a bit smaller in diam. but, these work!

Are they done yet?
They're lookin real good there Thadoc. I'll be looking forward to the finished Q-view.
 
Looking real good. Do I see some fire brick there in the bottom of your smoker. Has it helped with recovery times? I just added several to mine. I'm still working on a perforated baffle plate as well.
 
Yes those are fire bricks, they seem to really help. I will be picking up more some day to line my offset smoker!
 
Well its about 1:30am and just got done cutting all of the sticks up, I had to pick my brother up at the airport at midnight so I let them hang for a while until I got back. Pulled them out of the smoker around 9:30 or so. After 8 hours total of smoking this is what I got!

In all I think they turned out great, I used some pre mixed seasoning I got from the local butcher that he suggested, Granpa Josh's seasoning. I added some cajun and some more crushed red pepper for a little kick along with the pepper jack cheese. Not too hot but, just enough kick to eat another! Thanks everyone for lookin' I think I will be doing a bigger batch next time, I'll be sure to post some more qviews when the time comes!

How about next time doing a complete tutorial from start (ingrediants, grinding, mixing) all the way through with pics???? I bet it would become a sticky.....

Thanks oneshot, I will have to do that next time, I didn't think of it until I got it all mixed up and in the fridge. My son helped me with all of the mixing and stuffing! I tasted one... maybe two... They were AWESOME, some of the best stix I have made yet! There will be more to come in the very near future! Thanks again!!!

Thanks everyone for the compliments I was very satisfied with the end result of this smoke session, I will be sure to do a much larger batch next time along with the start to finish Q-Views for everyone to see. I will be doing a turkey next week so stay tuned for some turkey Q-Views!
