Tips for a Newbie

  1. Hey All - Dan here -- Decided to figure out what smoking is all about...Tried it a few times but ready to get a little more serious. I have a propane grill that I am going to start on until finances get better. Need to go get some wood and a smoking box.

    I love to cook and moved back to PA from FL where I learned to love smoked foods. I really want to get good at this but don't know how except to try it. My wife and kids can't wait for me to get good. Any tips on using a gas grill for this?

    I want to smoke a pork roast or some chicken? Any thoughts?

    Sure, welcome. First go through this site, it's full of information and get the tree day smoking class.
    If you buy a smoker box ok, but you can also use foil pouches. The theory is the same regardless of the cooker. On a gas grill put a drip pan under one of the side racks with some hot liquid, I use apple juice. You'll keep that burner off. turn on the other 2 or 1 depending on if you have a 2 or 3 burner grill close lid and pre-heat. Once pre heated place the foil pouch with presoaked chips in it next to a lit burner. Place you meat over the drip pan close the lid. Adjust the flame to keep the temp range around 225*, spritz with liquid every 45 minutes or so.
    This is just a general idea, you'll need to play around and don't get discouraged, everyone here including myself have burned, ruined, or otherwise destroyed our share of meat.
    The key thing is to enjoy it, and so long as you and your family like what you produce....your a hero!

  5. Welcome Dan. I too started out with using a smoker box on the gas grill, first made from foil, then one specifically for my grill. Then I figured I had made pretty good ribs until I entered a small local contest and came in dead last...but I had a blast! I then scoured the internet looking at smokers and decided on a brand/style I wanted and its been even better.

    You will learn a ton from this site, wish I had found it 2 years ago!!!!
