I was just watching throwdown with BF, fried chix and waffles was the dish, but he made a sauce that has me thinking.

Maple syrup, dijon mustard, and horseradish.

So I am thinking...combine these ingredients and use it as a mop when I smoke the ham curing in my fridge. All those flavors coming together...it has to be awesome.

Anyway...just wanted to share that and see what you guys think. Hot or Not???

Not so much a mop, but a glaze for when its finished or maybe for the last hour of the smoke.

Never tried honey on the ribs, I use mustard prior to the rub, but hey give it a try...like everyone says...you still get to eat your mistakes.
 
Thinking of maybe trying the dijon, horseradish, maple syrup mixture inside tomorrows fatty, before stuffing and rolling it up.
