Anyone know if there are any health concerns with eating the potato that you use to hold the digital thermometer with?

Cuz I have twice in a row now. The potato flesh stays very nice over long cooks, and I really like the skin no matter what.

A little salt, maybe some hot sauce mixed with sour cream.

Scoop the flesh, mix it all up, stuff it back in, and its daaaaamn fine eating while you wait for things to sit!
 
As long as the probe is cleaned in between use, and it's not made of lead, you should be fine.

i don't think there are any - keep in mind the potato is there to hold the probe for thermometers that are there monitoring the temps being used to cook big hunks of meat (that will soon be eaten!) in the same atmosphere - if there were health concerns for the potato, there would be some for the meat too, i would guess.
