Southwestern Lasagne
I came up with this recipe a while back basing it on my Mom's Italian Lasagne recipe. It must be ok because it never seems to last very long.
Here ya' go...
1 lb - ground beef
1/2 lb - pork chorizo
1 14.5 oz can - S&W Stewed tomatoes, Mexican recipe or eq.
1 can - tomato paste
1 can - tomato sauce
1 can - sliced black olives
1 can - whole green chiles
10 oz - lasagne noodles
1/2 tsp - cumin, ground or seed
1/2 tsp - chili powder
1 - small onion, diced
4 - garlic cloves, diced or crushed
4 cups - shredded jack & sharp cheddar cheese
sour cream
var. 1 - habenero
Brown beef & chorizo, drain fat. Combine with tomatoes, sauce, paste, olives, onion, garlic, cumin & chili powder. Bring to simmer for about 30 min. while cooking noodles. Put one layer of noodles in a greased 13 x 9 baking dish & then layer meat mixture, green chiles, 1/2 of cheese. Repeat noodles, meat & remaining cheese. cook in 350° oven for about 35 min. Serve with a dollop of sour cream if desired. I sometimes add a habenero to the mix to heat it up just a might.
