The difference betwen smoking and BBQ

Today, or this weekend, I learned that lesson. Ive been eating great food from my digital Bradley and I wouldnt trade her for the world.
This weekend I fired up (for the first time) three offset fireboxes with quick, last minute mods with links from these halls. First of all, I was limited automatically to mesquite and hickory, two varieties I almost never use. Thanks to the easy access of variety wood via bradley and amazon I have a full cabinet of varieties to mix and match.
Anyway I was excited about making the leap. It was in this venture that i discovered the diference between the two. To reall BBq, you must be in control of the elements. you must fight to make the balance work for you. There are variables in true bbq. So after 3 days of smoke inhalation I came home from my conquest and fire up my humble 4 shelf, go back inside and plan for dinner around 10. Heres some pics of the kit and kabboodle, pardon the double post of some of them.

If I wasnt working like a dog and trying not to be so vain about the food, Id have some pictures of the finished meat. My bad.

Sounds like a busy ol day there....... Well for diving right in there.

Tending to the fire, watching and adjusting temp, smoke output etc .... that's all the fun part.............. Then you get to eat what your results.
