We will be trying the pastrami smoke tomorror. The corned beef has been in the brine for a week and the juniper berries came in the mail today.

Found pork butt yesterday .99 centa a pound. We rubbed it last night so we justed started a pork this morning.

The pastrami will be ready to smoke this sunday and the buckboard bacon is in the rub for the next 2 weeks.
We have sausage and breakfast sausage to do today.
Tomorrow we bottle 30 bottles ov an experiment..COFFEE WINE

Right now we are drooling ove our late lunch today.

poor debi- for our gathering later this month i was gonna do the tequila/cilantro/garlic grilled shrimp garnish fer bloody marys... and she can't have any of the above..... good thing my wife is an er nurse...... lol

Now there's a man that looks like he enjoys making sausage like I do! Big Hugs Scotty! I prefer to do smaller batches also. Although with Xmas comming I'll have to step it up some!

I Had to relocate the temp probe , I was getting a high reading too fast. I pushed it in from the thick side to the left. its readin acceptable internal temperatures now.
 
Rhe coffee wine is bottled and corked, We will bring some to share at the florida smoke out.
