thanksgiving brisket

my second brisket. on pitboss vertical 5series pellet smoker. ran a mix of lumberjack pecan and char hickory. got her in the smoke around 7pm wednesday. ran it 225 overnight. i opted out of using the stock water pan because id always have to refill it every 2 hours. i covered it in foil and used a big roasting pan of water on the rack immedately above it instead. ran it 250, 275 starting around 3am. wrapped and placed in pan with some a few tbsp of tallow round 8am it was at 175 internal. pulled at noon at 203. let it sit on the counter for an hour. got the pirtboss to run at 140,150 consistently so i just threw it in there until we ate around 430.

overall super delicious. i was super happy with the bark but the lean side wasnt as tender as i'd like it and the fatty side was basically falling apart too tender almost. i used some fancy whiskey barrel smoked peppercorns as the pepper in the rub. will probably use a bit less salt next time too. i have almost of pint of tallow left too so thats nice. happy thanksgiving!
