Thanks to those in this group that helped me smoke these! They were Perfect.

Those look great, and welcome to SMF

Did you do anything special to the hocks ? ( soak, brine, rub , asking for a friend )

I just cured them for 7 days, I soaked them for an hour but I don’t think it was necessary I won’t next time. I didn’t go with a rub because I put them in Greens and beans. I do plan to do them again especially the turkey and I think a rub would be FANTASTIC!

You assume correctly! I was a professional chef before nursing school. BBQ is a whole new world and im having a blast with it!
32 yr nurse here. I’ve done med/surg, ICU, Trauma ER, traveled, and PACU now. Been a great career.

That’s Awesome!! I enjoyed nursing I semi retired 6 yrs ago to raise my twins. This group has been nothing but welcoming and full of advice glad to have found it!
