I just cured them for 7 days, I soaked them for an hour but I don’t think it was necessary I won’t next time. I didn’t go with a rub because I put them in Greens and beans. I do plan to do them again especially the turkey and I think a rub would be FANTASTIC!Those look great, and welcome to SMF
Did you do anything special to the hocks ? ( soak, brine, rub , asking for a friend )
