Hi All,

Thanks for letting me in. My Name is Ed and I live about 50 west of Chicago. I work as a machine builder but I have a personal chef business on the side.

I love to cook, grill, BBQ and smoke. I have an electric smoker that I've been using for about 5 years and I'm always trying to learn something new. I like the freedom of electric because I don't have to babysit the temp constantly. I make a dynamite pork shoulder but my ribs can be better. Right now I've got a brisket on (the first in a long time) and was checking cooking times when I found this forum. I hope to learn some things and to share some of what I've learned in all forms of cooking.

According to my wife the other bad habit I have is fishing and I get out as often as I can. Luckily, she likes to go out with me so it usually isn't a problem.

This forum has been around for over ten years, so there is a good chance that any questions you may have, have already been answered (they may have 10 different answers, but you'll get an instant response non the less).
