Maui, Hi.
Aloha,

I need some help here. A brine that I want use mentions Tender Quick. No one on the island carries it. What can I substitute for it? What exactly is Tender Quick?
 
Tender Quick is a curing salt heres a link to the Morton's website

Many of us have had to order it right from Morton's shipping is kinda high but. If you can find Instacure or Prague #1 they are also used for curing BUT at different amounts used
 
also you may want to check with a meat locker, butcher, etc. Somebody in Hawaii has got to be curing meat.

If all else fails, send me one plane ticket. I'll come with a suitcase full of it for ya. What do you think TSA would do with that one? LOL
 
Thanks for the great leads. I'm checking with a possible source on the Big Island of Hawaii. If that does not pan out, then I'll check out the Sausage Maker site.
