I put a 9lb bone-in butt on my GMG Davy Crockett at 9pm last night. 225 the whole time with no crutch.

Right now one side of the butt is 205+ but the other side, close to the bone is a bit over 160. Should I just keep the low and slow going until the part by the bone hits 205 before failing to rest? Haven't really seen a temp differential that large before but my butts in the past have been the boneless ones from Costco.

Keep smoking until the bone pulls clean. When that happens, it's done.

Pulled the bone 15 minutes ago and it was breaking clean from the meat. Foil and faux cambro until time to pull an serve!
