I am smoking at Shank portion pre-smoked ready to cook Ham and was wondering what Temp I should cook it to.

Thanks

Pre-Cooked Ham - A ham that has been heated during some part of the processing to an internal temperature exceeding 137°F but less than 148° F. Most commercially processed hams are heated to a temperature of 140° F. Temperatures reaching 137° F will kill the trichina parasite. A partially cooked ham still requires additional cooking prior to eating. It must be heated to an internal temperature of 160° F.

but I would go no more than 150º

Internal Temp of 160 . Thanks.

I am using a mix of 1/3 apple to 2/3 hickory. I will do Q-View of finished product.

Thanks,

Mike

Dude

Yes, the first part of my post was a quote. Sorry. I just found 160º for a pre-cooked was too dry for my taste. So I would go only 150º
