Interesting concept. We love tacos around here but I never considered making them with pork. Your links look very good so I may have to give this one a try....or at least a close variation of it.

Man! What an interesting concept for a sausage link on a bun zippy! Major kudos and like! And +1 on the salsa...exactly what I thought of when I saw the buns on the grill!

Nice job on the sausage . I have used store bought Chorizo in flour tortillas with what ever else you want . Yours would be great for that .

Oh man that just made me think of doing a Tex-Mex meatloaf!!!!
I would serve it with a side of beans and rice and have salsa to pour over all of it!

I'm thinking you just do a normal meatloaf but make sure you have cilantro, cumin, and chili powder in the seasoning.
Instead of doing bell peppers use de-seeded and de-veined chopped jalapenos and add cheese to the meatloaf.
Finally instead of using bread crumbs or oatmeal (my meatloaf binder) use broken up tortilla chips!!!

Oh and obviously smoke it with Mesquite wood (100% Mesquite Lumberjack pellets in my case).

Wow the cogs are spinning in my head lol.:D
