Finally a virgin smoker no more !! did jerky seasoned with hi mountain cracked pepper n garlic.....and my first try at 3-2-1- baby backs !!!
I used my new masterbuilt ( centro )with hickory for the jerky ...it turned out great ,but the meat was just a little too thick for my liking and as for the ribs ..did them on my gasser with apple chips they were amazing ...(family bowing) throwing roses at me ...lol :)... thanks to all for the posts I spent hours on reading and a SPECIAL thanks to GOFISH for his advice last night !
Unfortunately I can't get the pics to upload ...says they're too big ? any suggestions on fixing ? and then I post porn

Practice makes perfect. I cheat ....... I buy the thin sliced bottom round top steaks and use the kitchen shears to cut them in to the width I like my jerky. Glad to hear the ribs were a hit too! That Centro will work like a charm for you.
