I have been wanting this for quite a while now. I have bought enough cheaper products in the past that fall apart after a few years and wanted a smoker that should last as long as I do. I have a Sunterra Santa Maria Pit Grill so I knew the quality would be there but the price kept me waiting until now.

The fit is very tight and the welds look great.

I will test it out soon. Dragging the beast off the pallet and around the yard made this old dog sore.

I fired it up today after splitting up a bunch of Hickory and Coastal Oak.

First I did a biscuit test.

It was easier to keep a constant temperature than I was expecting.

I was afraid to try a brisket for my first cook so I went with something a little cheaper, a Picanha.

I guess there was nothing to be afraid of, it came out great.

I had to do a lot of looking around to find out the answer to this.

The tuning plates were shipped with the largest holes near the firebox and the smallest holes near the chimney. I thought that seemed backwards and apparently it is. I will turn them around before my next cook.
 
I have used this smoker three times so far and I absolutely love my choice to buy it.

After flipping the tuning plates over it is more even across the surface as I expected.

This is a pretty large smoker for the back yard hobbyist so unless you are smoking for a large crowd it is kind of overkill. I usually only smoke for three so it is a bit much but that is OK for me.

The down side of a smoker this large is it uses up a lot of wood. In three cooks so far I cooked up a minimum amount of food and used about 2 cubic feet of wood to smoke it.

I can get Hickory( 1.5 cubic boxes for $21) at my local Super Walmart but will have to search where I can get other hard woods locally. I have a reserve of Coastal Red Oak but I don't want to use it up to quickly. It is a long drive to get more.

I did buy two 1.5 cubic boxes today and had fun cutting the large chunks of wood into small splits with my hydraulic log splitter. I will just need to get hard wood other than Hickory for my future smoking.

Where I live smoking wood is not as available as other parts of the country.
