Sunday's take it easy smoke!

After a long day of tourny fishing on saturday, I decided to have shorter smoking day than usual. No big hunks of beef or pork today. Just some of the other stuff!


Got some chicken wings, some decent sized shrimp, and 3 fatties !

The weather was awesome today, and the yardwork bug had me away from the smoker, so I picked some easy foods today. The fatties, about ready to come off.



and sliced after a lil rest. JD and cheddar, JD and Mex mix, and JD sage w/ pepper jack.



The shrimp were marinated for a couple hrs in EVO and seafood rub, then smoked at 225 for about 1 hr. Chilled and then ready for the cocktail sauce.



The pic I had of the wings didn't turn out very good(kinda dark), but they were dusted with hot wings rub, and smoked for 1 1/2 hrs at about 250-275(hot side of the Lang with damper aimed up into their area), They then came off and were mopped with Sweet baby rays wing sauce, and into the oven foiled at 300 for another hr. They were pretty darned good too!
 
Looks nice, I have those Non-large meat cooks at times, useally with the dots.

I have considered getting a Lang 60, in the future.

Thanks guys, Sumo, my favorite has always been the JD or BE regular sausage with pepperjack cheese stuffing. I tried the Sage today because of a suggestion by another smf member. It is good, but my personal taste just likes the regular sausage better.

Buzz, I have fallin in Love with my 60. I have yet to put the top shelf in it and cook something on it. It was pretty full with 2 briskets, 4 butts and 3 fatties a couple weeks ago, but still didn't need the upper rack!

I guess the other thing I like, is being able to use logs, or split logs, and get such a clean burn/smoke.
Every smoke is still a learning process, but it is fun. I started taking some notes a few weeks back,because of all the adjustments that can be made with baffles, dampers, and tongue elevation ect. It will take me all summer to figure this thing out, but at least I won't starve while I learn!

Sure was nice to be outside with some thin blue in the air while I worked in my yard in my shorts. Hello Spring! Where the heck have ya been?

Thats some great looking food there............Those fatties look like they were very tasty.........hope you caught alot yesterday..........
 
Oh sorry, I forgot. The tourney was a salmon tourney in Lk Michigan. It was alot of fun and there was about 32 teams(3-4 person per team). The weather was awesome for early april around here. We caught our limits of Coho salmon,but need to catch a few brown trout or Kings, or steelhead to have a chance to win. Had a wonderful time with some pretty good friends. I fed them BBQ pork, and brisket while we were trolling around catching fish. They loved that part. I don't think these guys ever had brisket before. When I was saying goodbyes, they asked me if I wanted to go again next week !

I told them probably not, but they left me an open invite for anytime.LOL I guess i better keep a couple packs of vack sealed Q around for the next adventure.

You are exactly right. It took me over 3o yrs of salmon fishing to figure that part out. I used to be one of the young die hard anglers who would stop at nothing to catch the biggest or meanest fish, won lots of tournaments, but I took it all way too seriously.Missed out on alot of the adventure for the sake of the prize.An old friend always told me to settle down, and relax. He used to make me so mad when he said that, while we were tournament fishing partners. He is gone now, been missing him and his advice for over 6 yrs now. I wish he was alive so I could tell him how right he was.
Nowadays, I go to these events to see old friends, have some laughs, and make some memories for myself, and hopefully others too. I tend to be the one telling other guys to "take it easy".
