Fellow SMFers,

Its 7:30am, I am enjoying my 2nd cup of coffee, and the smoke is already rolling at the Doc household.
With a few smokes under my belt, I figure why not invite some friends over and introduce them (or subject them) to some of my wares. Confidence being up over some past sucesses (note: at 7:30 am, confidence not inflated or influenced by alcohol

, check back after noon) I decide that I can handle a 6.5# butt, 2 slabs of spares, and 2 fatties. This is the biggest smoke I've done yet. Hopefully, my burnt offerings to the BBQ gods will be carried to them swiftly by the thin blue smoke...

Butt's been on since 7am. Ribs going on at noon. I've gotta sign up at Imageshack so I can get y'all some good Q-views today.

Here's the butt before she goes under the foil. Took it up to 155*, heavy cherry and hickory smoke on it.

Here's the ribs, they went on at 12:30, gonna use some red oak and maple on these.

Well, not that I should be suprised that its raining in July in Orlando in the afternoon (like every day), you just always hope you cant get through a smoke with out the wet stuff!

Here's the hatches battened down. Fatties are rubbed and on.

Well, between the pork coma and the shark week premiere I didn't have a chance to post the final pics. I think everything went over well considering there wasn't a drop of anything left! Well except the sammie I stashed in the fridge for later

Which BTW was delicious!

Here you go, pulled pork, a batch of some Doc-tored up wicked beans (subbed a little sweet baby ray's and sat them under the ribs for the last hour to grab some of those delicious rib drippings), and ribs that threw out bones when I pulled them off!




I couldn't have done this without y'all and your help. I owe a big debt to you and SMF!
