Back to the fridge before mixing.

Didnt feel like getting the meat mixer out or the stand mixer so I just hand mixed.

Going to fridge rest the mix, get my casings soaking and stuff tonight.

Stuffed last night and hung in cure fridge.

I used a couple clear casings I have had for freaking years, I think they are for dry cure but still should work.

Out of the fridge this morning, hang at room temp until the smoker gets to temp, pretty cold this morning.

Well the 2 salami casings did peel pretty good.
