Summer Sausage and cure

I have looked at different Summer Sausage recipes and some say to put the sausage in the refrigerator for up to 3 days mixing twice daily to let the cure sit before stuffing.  Is this true.  I just made some and mixed stuffed let it sit in the refrigerator for 12 hours and smoked.  Is that alright.

I always mix the sausage and then stuff into casings and let sit for 24 hrs, in the frig and then smoke. I never go above 165f as this renders out the fat .Piker 
 
I am with Piker on this,  I mix and stuff let stand for a day or two OR mix and let the batch sit in the frig for a day or two and then stuff, eat or vacuum pack and freeze.   All depends on what the clock says.   The point of letting it sit is so the cure and all of the other ingredients "flourish" in the meat. 

I have not been able to tell the difference in the methods that I do,

You done allright. As long as you added the cure to the seasonings then mixed and stuffed your good to go. Smoke them to an internal temp of 155*. Quick cool in cold running water or an ice bath to under 100*. Call me when your done, I'll be right over....
