Suggestions with pork hocks

    All,

    About to head to the local market to pick up some meat. I'm thinking about smoking some pork hocks, but not sure if it's a good idea. Tried searching the forums but didn't find much.

    Anyone smoke these before?

  2. If it were me I might try smoking them then putting them in some beans.

    I smoke a couple dozen a year, vacuum freeze them and use when I make slow cooked bean recipes. I usually smoke with hickory or pecan.
    I mix some kosher salt and fresh ground pepper in a bowl then rub the open ends of the hocks real good before smoking.
