Startin the Country Style Rib Today!

    Got 15 pounds of country style ribs in the brine bucket. Tomorrow I bake, then grill with smoke and eat!

    Will post recipe and pics as things progress. Getting excited to build the new smoker. Won't be done for a bit but oh so looking forward to smoked chicken, ribs, fish, turkey, OK gotta stop, my shirts all wet![​IMG] Hey this ain't no peep show![​IMG]

    Bake and grill, what's up with that?
    No smoker i 'm guessing?
    You got a gasser you can cook indirect with??
    Throw on a foil pouch with some chip's in it and your smoking! [​IMG]

    Just a while back somebody stole my smoker, thus, resorting to primitive ways to still enjoy the food!

    Gathering parts for the new smoker as we speak. Just going to take a bit of time to build what I want.

    I have a charcoal horizontal grill with smoke box, so start em in the oven, brown them up on high heat, then over to the cool side for some smoke then sauce then belly![​IMG] Here goes that slobbering thing again!

    Building an extra heavy duty electric this time. My old one was gas, but the new one will be living in my shop, so wan't the electric. Will have cold smoke and hot smoke features and am thinking about remote smoke generator to boot. Will see as things progess into the build phase. Been buying parts each week.

    Using an old enamel lined early 50's refrigerator I picked up for free. Pulled all the freon components out earlier and the freezer compartment/coil was removable so I gained all the interior space that way. Going to hopefully get started on the build next weekend if the weather straigten's out a bit, to cold to work in the shop this weekend, really need to get that wood furnace installed this summer![​IMG]

    Here's a q-view of my ribs after brine.



    Now into the oven at 250 degree's for some slow cookin, after that on to the grill for some smoke!

    Here's the brine recipe:

    15 pounds country style ribs
    1/2 Gallon Apple Cider
    1 1/3 Cups pickling Salt
    1 1/2 Cups Brown Sugar
    1/3 Cup Onion Powder
    1/3 Cup Garlic Powder
    1 Tbs Louisiana Cajoun Seasoning
    1 Tbs Black Pepper
    1/4 Cup Full Flavor Molasses
    1 Large onion rough chopped
    2 Heads Garlic Crushed

    Will add more q-view as things progress!

    Here is some q-view of my ribs on my grill/smoker. These won't be as good as if they were done in a true smoker, but they are looking mighty tastey![​IMG]

    Kinda tough conditions to work in today, the wind is blowing about 25 MPH!
