A little St. Louis style spare rib action on the Oklahoma Joe's Longhorn stick burner smoker this afternoon. 😍

And no lighter fluid used this time. I need to work on starting a fire and some temp control though.

I used my propane torch and some smaller hickory chunks to get things going.


But I can finally start learning this smoker more in depth.
 
Not bad for a second attempt on the stick burner.

The first rack last year had a taste of ash to them and I was none too pleased. Turned out I had the rack too close to the fire box.

This time I put foil on the grates and moved the rack to the far left. No ash taste this time.

3 hrs and 21 mins. I had a few spikes in temp due to still learning fire control, but they were perfect. A slight bite, very tender but not fall off the bone.

I need to experiment with some different rubs. I used my usual modified memphis dust and then sauced with Rib Rack BBQ sauce. But they were still pretty darn good.

I think those look like money! Girl, I've actually had to throw out racks of ribs when learning to cook on my offset. It was an exercise in futility for several attempts - but it got better. Nothing beats a stick burner for flavor when you get it right!
I bet those beans were killer too! Nice one.
