I say 3-2-1 because they're essentially spareribs not baby backs.
What say ye?
I'd also say 3-2-1 due to the size and thickness of the cut. Baby backs usually get the 2-2-1 method.
3-2-1 and you cant go wrong. watch that temp. amd keep it steady.
