Okay all - I've got a simple one for ya. What's the difference between spare ribs and st. louis ribs? Is it just the way they're trimmed? I know that this is the place to find the answer.
 
Yes, it is the trim. Here is a link to a video showing how to do it!

If you do a search on you-tube it has a video about the diffference.The way I taken it the tips are trimmed off and that makes it St.Louis style

Babybacks are the Loin Back ribs that come from farther up the pig. It's actually a different cut. Baby backs have more bone and less meat, and take a bit less time to smoke!
