I'm driving with my family through St. Louis and Kansas City in August. I want to have dinner at "the best" St. Louis rib joint. The next day we'll do lunch at "the best" KC rib joint. 

I'd like more of a place the locals go as opposed to the place the tourists go.

Any suggestions?

In St Louis I like Sugarfire Smoke house. If you are bypassing  St Louis from 70 or 55, St Charles location is not far out of your way.  From 64 Olivette or Winghaven are on your way. Go down Town if you want to see the arch and pay to park.

Pappy’s Smokehouse is very good but the line gets long and moves slowly, be aware Pappy’s does sell out every day. Do not be late at Pappy’s.

Sugarfire, Pappy's and Bogart's seem to be the top 3 suggestions I'm getting from a handful of people for St. Louis. We'll be in St. Louis all afternoon and overnight. I think we need to hit two of those.

We'll go to Arthur's in KC.
 
In KC you also might try
Joe's Kansas City Bar-B-Que.

It's a local place that expanded to several locations. I've been to the original spot in the gas station numerous times. I think it's the best in KC.
