First time poster here. I did the roll call post as well. I've been experimenting with smoking food for the last two years. I started with the Brinkman charcoal.
Now I need to get some of your thoughts on a few things. I was able to find a portable SS food warming cabinet (picture-link below inserted images) and most recently have stumbled upon an good ol' Philco. Both need mods. I want to build a cabinet around the SS to add insulation (chilly winters in WI), better the appearance and improve vent and draft control. Good ol' Philco needs to have be put on casters, the remainder of plastic removed and relined with aluminum sheet or other metal. Any suggestions on the type of metal? I also need to add vents and drafts. My thoughts are to go with external heat and smoke for more flexibility (temp control),ease of reloading wood chips, and not disturbing smoke chamber with heat loss and soot/ashes.
I'm torn as to which one I should keep. Both are about the same amount of work, but not sure of durability, performance or any other thing(s) that I'm not considering. Any thoughts? I guess it is a good situation to have. Apologies for the long post.
